I think it would work fine. I would make the cornbread according to your package directions and stir in the bacon and scallions. I have another recipe on my blog that uses a cornbread mix and then you add some stir-ins. Works great!

I already have Martha White Buttermilk CornBread Mix – which includes CornMeal, Flour, Baking Soda/Powder, & Salt. Maybe if I just added total for dry ingred and used 2.5+ cups of mix?? Any thoughts? Recipe sounds amazing.
