The birthday treats continue! April is a busy month for birthdays around the office, but I’m not complaining about stuffing my face with dessert every other week. I told you about “The List” in my previous post, so it’s always fun to see what people choose. The winner this round was Lemon Yogurt Crumb Cake! This one made the list because it’s got swirls of lemon curd on top and I swoon over lemon curd. Lemon cake, lemon curd, and a crunchy crumb topping. Success!

Deep Dark Mocha Cake

Forgive me for all these gnarly pictures I’m posting lately. I’m still playing catch up from holiday goodies and I just never get good pictures then. You’d never speak to me if I didn’t share this Deep Dark Mocha Cake with you though. I could not wait to get a slice of this! The name is a bit confusing because there’s no dark chocolate in sight, so I’m not sure why it’s named “deep dark.” When it tastes this good, I don’t care what you call it! Take an ordinary chocolate cake and soak it with espresso, next add a layer of cream cheese filling, then cover the entire cake in chocolate ganache. Done, done, and done!

King Cake

I finally baked a King Cake! I’ve wanted to try my hand at making this delicious Mardi Gras treat for years and finally did it. Although I clearly need to work on my dough-shaping skills, the final result was everything I hoped it would be. Tender, cake-like bread, a touch of cinnamon, and creamy glaze sparkling with colored sugar. I forgot to take my nice camera to my mom’s this past weekend, so forgive me for the craptastic pictures. This recipe was too good not to share!

Ultimate Coffee Cake

Y’all. This Ultimate Coffee Cake has me swooning like the first time I ever laid eyes on Bradley Cooper. (Any Alias fans out there?) A couple of weeks ago, I was playing “let’s see what’s in the freezer” and found the remaining dinner roll balls from this Savory Monkey Bread. I wanted to use them up and vaguely remembered a coffee cake from Paula Deen. Turns out I had everything I needed except for one ingredient. Easy enough. Let’s use up those rolls!

Now is this a ginormous chocolate monstrosity or what? I took these pics with my phone, so excuse the quality, although I’m not sure my fancy camera would have done any better with this chocolate blob. I was super excited about this Pumpkin Spice Cake with Chocolate Pecan Filling. It combines the best of three worlds in holiday baking: pumpkin, pecans, and chocolate. Getting it to look as good as the Food Network’s version proved to be quite the unachievable feat.

Fresh Lemonade Cake

Let’s just deal with the elephant in the room right off the bat. The picture of this Fresh Lemonade Cake isn’t going to come close to doing it justice. I try to do most of my cooking and baking on the weekend when I have more natural light, but when it’s a birthday at work, that isn’t always possible. Which leaves me to baking during the week and by the time that’s done, it’s pitch black outside. The result is me getting up early and trying to photograph this cake when it’s barely light outside and with my cake carrier bottom. I was also super lazy with the wax paper so it left indents in the cake. Oops! Y’all know I don’t get fancy for pics anyway, but I thought I needed to explain myself on this one! Now back to the cake. This recipe comes from Cooking Light and it’s a revamp of a popular cake recipe. It’s absolutely fantastic. You know I love, love, love chocolate desserts, but it’s nice to get a break from them. This is probably one of the best lemon cakes out there.

Pumpkin Whoopie Pies

I made cupcakes not too long ago and had a lot of cream cheese icing leftover. What to do? Make another dessert of course! It’s been a while since I’ve made whoopie pies and since it’s everywhere…why not make Pumpkin Whoopie Pies! The cream cheese filling would go so well with anything pumpkin.

Oh I can’t gush enough about this cake. If you’re a fan of chocolate and coffee together, you are going to love this Mocha Cake. The texture is so unique and that’s one of the reasons why I love it. The entire cake is 12 servings and that may look a little small, but the flavor is so intense and rich, that’s all you need. You’ll never believe this cake came from a dieting cookbook! One slice is only 156 calories and that includes the dollop of whipped topping and fresh berries!

Punch Bowl Cake

Saturday was a rainy, dreary day here in Nashville. Perfect for baking, if you ask me! This cake is long overdue for an appearance on the blog. Punch Bowl Cake has a lot of history in my family. My mom would make this cake for my Papa’s birthday and we’d have it for holidays, too. I’ve made it a few times as an adult and it brings back so many memories. It also helps that it’s quite delicious with not much work to put it together.
