In reply to Lyssa. Ooo, thanks for the tip about the sprouts. I thought it was odd my recipe didn't include eggs, but it was from a vegetarian magazine. For one serving, I got crazy and topped it with a fried egg. Super yummy!

Crap, I have pretty much all of these ingredients at home…
My mom always scrambled eggs into our fried rice. Egg whites are also a good option for bulking up your meal. Many grocery stores (especially asian ones) sell bean sprouts in bulk so you don’t have to wind up with waste.
