I think I found it! I was looking for a chocolate chip that would melt in your mouth instead of staying crunchy. That’s what makes Baskin Robbins’ mint ice cream so good … it’s the melt in your mouth chocolate flakes. I’ve never heard of stracciatella but I’m hoping it will come close enough. I’m trying to figure out how to replicate Baskin’s mint chocolate chip ice cream roll cake… But, I knew I had to get the ice cream part down first. Have you ever had the frozen cake? To die for. But, I shouldn’t ask you if you’re satisfied with the ice cream by itself… Bad me. Forget I said anything about it!!

In reply to Carolyn Jung. This is made with fresh mint. I added the mint extract to make a stronger mint flavor. You can make this ice cream with fresh mint only, mint extract only, or a combination of both depending on your taste.

Oh, I really shouldn’t have seen this post. I think if I made this I would never be able to stop eatting it. I absolutely love mint chocolate chip but I have never made it homemade before. This sounds really good!

looks awesome! i’m not sure if you know, but mint chocolate chip is also my favorite type of ice cream. hint, hint. =) good for you for conquering tempering eggs + making this fabulous ice cream!

Wow! That. Looks. Awesome. It looks like you went to Baskin Robbins and scooped out some ice cream and put it in a bowl. I expect some for breakfast Monday morning. Yes, I said breakfast.
