Pineapple has traditionally been coupled with pork dishes for a reason so I think this would be a great addition. Hubby will only eat pico de gallo on his carnitas tacos but I love the possibility of using this slaw to avoid using salt.
As for adding salt to the slaw, I would wait until it is served because the salt will draw out the water from the veggies making the sauce very runny. You may be o.k. with this and the salt with these types of veggies makes them even more crispy but the sauce runny. Thanks for this idea.
