I love brown rice and snap peas. I buy my rice frozen at Trader Joe’s. Makes it easy and it’s good.

This looks SO good – so my type of fresh, light meal or snack. And I totally hear ya on the leftovers – I think that quinoa would definitely stand up better, leftovers-wise. Or maybe even barley?

I am glad to hear that you’ve come around on sugar snap peas – they are one of my favorites! I wash them and eat them raw a lot because I love that crunch!
