I’m coming off of 10 days of glorious vacation! It’s a little challenging to get back into the swing of things with getting up early for work, getting ready for work, driving to work, being at work. Sensing a theme here? Yeah, I’m happy to be employed, but I sure do miss being on my own schedule, which most days didn’t include wearing makeup or heels. Getting used to my work schedule isn’t the only thing challenging me. It’s also going back to not eating the house down. No more Doritos, no more Devil Squares. Luckily I’ve got this fantastic, low calorie dinner that tastes like I’m still on vacation. This Tilapia with Fennel-Yogurt Sauce paired with Red Pepper Couscous makes me feel like I’m still splurging, but is much kinder to my hips than all those Doritos!

Yep, still on my kick of not cooking. I’m in salad and sandwich overdrive. I want meals that are full of flavor, but don’t leave me in the kitchen having to turn the oven or stove on. It’s way too hot for that. I’m also starting to become obsessed with white beans. I really didn’t like them as a kid, but lately I’m appreciating how hearty and flavorful they are. I’m pretty sure I’ve mentioned our running joke about always having corn in the house, so whenever someone says “What are we eating with it?” the joke is always “Corn!” Ok, maybe you have to be there. 🙂 I was looking for a side for our 4th of July menu and saw this Ranchero Corn recipe and instantly knew I wanted it. It furthers our joke and it has bacon AND ranch dressing. My mouth was watering just thinking about it. I love it when you look forward to a side as much as the main dish. I also wanted something really simple to put together so I could spend more time enjoying the festivities and not cooking.

I adore Giada De Laurentiis. Giada at Home is one of the few Food Network shows I still watch and I loved Everyday Italian. I couldn’t wait to get my hands on her latest cookbook, Giada’s Feel Good Food: My Healthy Recipes and Secrets. Plus I’m a sucker for any cookbook that lists nutrition information. I was a tad bit disappointed in the cookbook overall because I had to thumb through it several times to find a recipe that I really wanted to make. Out of the entire cookbook, only about five appealed to me. This Soba Noodle Salad stood out because of the dressing ingredients. Almond butter, soy sauce, lime, honey, ginger, wasabi. I love a comforting casserole. Simple and easy, and you usually don’t have to worry about sides. Cut a big slice and dinner is served! This Enchilada Casserole is just that. You all know how much I cannot resist a meal topped with a delicious runny egg, so when I saw this in my latest issue of Cooking Light, I had to make it the very next day. I was mostly intrigued because at 305 calories per serving, it included 1/2 cup of rice, 1 cup of the sauce, 1 egg, and some feta. That’s quite a lot of food!
