In reply to Beth. It's really easy with the mandolin until you get close to the end of the zucchini. I pushed it through slowly and then just cut the very last bit with a knife. Safety first, lol!

I’ve been wanting to try this for ages, just never got around to it! I’ll admit that I’m kinda scared of my mandoline (okay, terrified), so that’s what has kept me from making it before now. Guess I need to get over my fear and take the plunge!

I have long wanted a spiralizer to do noodles; it never occurred to me to use a mandoline or peeler instead. Dur. Thank you!

Next time instead of a mandolin try a Spiralizer! I saw a vegan/raw chef use one in a demo and you can buy one on amazon. They make longer zucchini noodles! I may have to get one and try this recipe out!
